A quick fix for your hunger, Egg Kothu Bread (Recipe)

There are only two type of days. One is that, I make a real palatable dinner, all set when my husband reaches home and he says, “I’m not hungry yet”. And the other is that, I’m so much exhausted already dealing with kids, I am thinking may be I will start cooking once he reaches home and he, once home says, “I’m so much hungry. Is there anything to eat?”

Yesterday was the second type of day. He reached home with a real big hunger. I could see that in his eyes and couldn’t sit for one more minute.

Fridge: Veggie basket, empty, just like any other day of hunger. Oh, thank god, some eggs are there. They always come to the rescue. So eggs, with what? I don’t think I have enough time for a two course meal. May be Pasta, do I have the ingredients for the sauce? How about noodles?

Looking around the kitchen, I found half a pack of breads reserved for the breakfast next day. So came this idea of Egg kothu bread, a twist from a very famous street food of south India, Egg kothu Parota.


And, it came out deliciously awesome, more than I expected. So, within 15 mins I could serve a tasty dinner and that was so much filling too.

I share with you the recipe here, may help you on your day of hunger.

This can serve a 4 member family.

Egg Kothu Bread:


  • Bread Slices – 8, I used whole wheat bread here, you can use whatever type you like.
  • Eggs – 4, big, beaten, salted.
  • Onion – 2, big, chopped
  • Tomato – 1 , big, chopped
  • Green chillies – 2, small, slit. (adjust)
  • Ginger garlic paste – 1/4 tea spoon
  • Cumin (Jeera) Powder – 1/4 tea spoon
  • Garam Masala powder – 1/4 tea spoon
  • Turmeric powder – 1/4 tea spoon
  • Red chilli powder – 1/2 tea spoon (adjust)
  • Black pepper powder – 2 pinches
  • Curry leaves
  • Coriander leaves
  • Salt to taste
  • Oil.



  • Cut the Bread slices into small cubes. I used the kitchen scissors for this.
  • Heat one table spoon of oil in a pan and throw in all these bread cubes. Saute till they get toasted evenly.
  • Transfer them to a bowl.
  • Heat 2 table spoons of oil in the same pan. Add generous quantity of curry leaves and the chopped onions.
  • Saute them till the onions turn golden.
  • Add Chopped tomatoes and green chillies and saute them together.
  • Add some salt now, just the right amount for the onions and the tomatoes, because we have already salted the eggs.
  • Stir till the tomatoes get smashed well.
  • Add ginger garlic paste and all the spice powders except the pepper powder.
  • Mix them together.
  • When you get all of them blended together nicely, add in the beaten eggs.
  • Keep the flame low now. Stir once all together.
  • While the eggs remain still liquidic (is there a word like this? Silly me 😀 ), throw in the toasted bread cubes.


  • Now, gently turn them all together without crushing the bread pieces until everything gets mixed up with the cubes.
  • Add black pepper powder now. Mix well once and off the flame.
  • Garnish with Coriander leaves. Serve with any sauce or curry of your choice.


Hunger? What hunger??? 🙂


  • You can add chicken or mutton pieces too to get a meaty version of this.
  • If you have any left over Korma or Curry that you feel would go well with this, you can pour in some of it, say two or three table spoons while sauting the onion and tomatoes. You will get a curried version 😀
